White sauce pasta very easy

 The easiest sauce ever! 


1/2 c pasta water

2 c ricotta

Parmesan to taste

Walnuts

Salt and pepper to taste,

Cook pasta and add the above ingredients except walnuts. Heat up sauce and top with walnuts. Creamy and delicious!

Mexican stuffed peppers

 Cook 1c rice with a can of drained black beans, chili powder, cumin, garlic and ancho powder, salt and pepper, 1 small can of tomato sauce (8 oz.). Cook corn separately and add to the cooked rice. Cut the tops of the pepper, remove the seeds. Blanch in boiling water for 3 minutes. Stuff the peppers with rice mixture. Top with cheese. Bake 350 for 25-30 minutes. 

Apple cinnamon cake

It is so delicious. I will be making this every apple season!


In a bowl, mix brown sugar and cinnamon and set a side. 

 1/2 brown sugar

1 1/2 t. Ground cinnamon

In another bowl mix:

2/3 white sugar

1/2 c unsalted butter

2 eggs

2t. Vanilla

1 1/2 c flour

1 1/2 t baking powder

1/4 t salt

1/2 c. Milk

1 large apple, peeled and diced


Grease and flour 9x5 pan. Preheat oven to 350. 


Mix sugar and butter. Add eggs and vanilla. Add flour, baking powder and salt. Add milk. Pour 1/2 batter into prepared pan. Add a layer of apples, patting the apples into the batter with the back of spoon. Sprinkle 1/2 of brown sugar and cinnamon mixture. Add the rest of the batter. Add the rest of the apples and brown sugar mixture. Bake 50 minutes to an hour. Let cool 50 minutes.

Amish sweet bread

 If you find it too sweet, add 1/3 c sugar. Makes 2 loaves. Great with jam or sandwiches. 

2 c hot water 110-115F

1/2 c sugar

2 packages yeast

2 T. Butter, melted

1 1/2 t. Salt

6 cups flour

Mix water, yeast and sugar. Let sit 10 minutes. Add cooled melted butter, salt. Slowly add flour. Knead the dough. Grease the bowl, cover with a damp towel or plastic wrap and let rise 1 hour. Punch down and divide in 2. Roll each out into a rectangle. Roll up like cinnamon rolls. Place in a greased loaf pan, seam side down. Cover and let rise 50 minutes. Preheat oven to 350. Will continue to rise in the oven. Bake 25-30 minutes. Brush with butter.

Potato and corn chowder

 A new favorite. Very easy to make.

2 cloves garlic

1/2 onion

1 potato, diced 
2 stalks celery, diced 
1-2 T Olive oil 
2 T. Butter
1 can of veggie or chicken stock
Plus 1/4 c water 
1 1/4 c milk
1 can butter beans
1 c corn kernels (frozen) 
Sage or marjoram 
Pinch of paprika
Salt and pepper to taste
Good topped with pickled jalapeƱos and cheddar cheese

Cook onion, garlic, celery, potato with olive oil and butter in a covered pot over medium low heat for 10 minutes, stirring every so often. Add the broth and water and simmer for 15 minutes. Add milk, beans and corn, herbs and seasoning. Simmer for 5 minutes.
