This recipe makes a lot. You can always cut it in half.
Peanut butter cups
Mini paper liners (used for mini muffins)
1 cup peanut butter, creamy
1/2 cup butter softened
1 1/2 cup powdered sugar
1 T. Flour if not thick enough to work with
2 cups chocolate chips
1 t. Oil
1 t. Vanilla
Mix peanut butter, butter, powdered sugar and flour together. Take a small teaspoon or half a teaspoon full, roll it into a ball then slightly flatten and set aside.
In a melt chocolate with oil in microwave or over a double boiler. For microwave, mix after 30 seconds or until melted.
Spray liners with Pam or canola spray or brush with melted butter. Take a teaspoon of melted chocolate and fill the bottom of paper liners. Place the flattened peanut butter filling in the cup, pressing down slightly. This helps to make a more even layer on the bottom. Place more melted chocolate to cover and fill. Refrigerate until hardened. We keep them in the fridge until realdy to eat.
