Sweet potato pie oatmeal

Based on the forks over knives recipe.  I cook the whole sweet potato but only use half of it at a time. Can double recipe.

1 large sweet potato, peeled and cut into fourths, boiled for 10 minutes or until soft
5 mejoul dates, seeded (can add 1/4 cup maple syrup instead)
1/2 cup milk or milk alternative
Zest of 1/2 orange (reserve the  other 1/2 of orange zest  with 1/2 cooked sweet potato)
1/2 cup oats
1/2 t. Cinnamon,
1/2 t. Ginger
1/4 t. Allspice
Dash salt

Puree sweet potato, orange, and dates, slowly adding milk in thirds. Low simmer the puree with spices  and oats, stirring every so often for 10 minutes.

Now, with the reserved peel and sweet potato, you can cook another batch later in the week. Yum
